I love the Sicilian flavors in this hearty vegetarian salad from Food & Wine magazine. You can’t go wrong with a combination of sweet golden raisins, tangy green olives, scallions and walnuts, all tossed in with tender cooked farro and a lovely fresh lemon juice vinaigrette. I imagine this would also be a delicious salad if made with another of your favorite grains: Israeli cous cous, quinoa, or even plain brown rice would also do the trick. Such a delicious combination of tastes, textures and good-for-you ingredients, this salad is also good the next day for a healthy, flavorful lunch.
