Pasta alla Norma is a classic Italian pasta dish made with cubes of tender eggplant, fresh basil, garlic, dried oregano, and diced tomatoes. This version of the classic (from the pages of the fabulous Fine Cooking Magazine) spices up the original version by adding a large pinch of crushed red pepper flakes. To finish off the pasta, pillows of part-skim ricotta cheese are added to the top, along with more fresh basil and a grating of Parmesan or Pecorino cheese.
