What a colorful and tasty side dish! If you’re not super familiar with wax beans, think of them as green bean’s first cousin. Similar in texture and flavor, the only real difference is their bright yellow color; easily cooked by either steaming, roasting or blanching, wax beans are a lovely side dish or as an addition to a crudité platter or side to your favorite dip. This version from Cooking Light magazine includes almonds, parsley and salty chorizo sausage. Having cubed pancetta and smoked almonds on hand, I subbed these in instead, but the flavors either way work together brilliantly. A drizzle of sherry vinegar onto the dish before serving really gives an extra ‘pop’ to the healthy side.
