 Céleri Barigoule, or ‘Celery Stewed in Olive Oil’ is truly a unique side dish (and very French I might add.)  A fresh mix of thinly sliced carrots, garlic, onion and celery are cooked in a mixture of olive oil, white wine and a touch of water until oh-so-tender, and flavored with the fragrant addition of fresh parsley and fresh thyme.  It’s as if you are serving the base of a soup as a stand-alone dish; brilliant in concept and unforgettable in flavor.
