This hearty salad of mixed bitter greens with a warm mushroom vinaigrette is a hearty side salad very similar to a warm spinach salad with bacon. Although a vegetarian version, the warm mushroom vinaigrette made with shallots, quality olive oil and sherry vinegar is just tangy taste that these bitter greens deserve. Hailing from Food & Wine magazine, this salad is a lovely array of radicchio, escarole, Belgian endive and I added fresh chicory as well. A hearty winter salad that is only made that much more crave-worthy with a final sprinkling of shaved Parmigiano-Reggiano cheese.
