A classic in Italian cooking, a traditional porchetta is a delectable boneless pork roast most often flavored with garlic, fresh rosemary, fennel seeds and lemon zest. Cooked until super tender and often wrapped in either pancetta or prosciutto, this quick-and-easy version makes for a fabulous one-pan dinner. The pork is coated in a mixture of the above-mentioned spices and flavorings, and is then baked surrounded by fingerling potatoes, onion wedges and lemon slices. You will truly impress with this Italian favorite!
