A simple yet flavorful dinner like this one is bound to be a hit. Courtesy of Giada De Laurentiis’ newest cookbook, Happy Cooking, this seared fish dish served alongside a simple arugula salad studded with green olives, citrus segments and a Dijon-mustard and oregano vinaigrette. Written to be made with seared cod, any of your favorite fish fillets will do. I used a nice fillet of steelhead trout, but whatever fish you choose will work perfectly!
