You can’t go wrong with a classic Italian dish like Chicken Marsala. Also excellent with veal cutlets, this simple yet satisfying dish starts with a quick sear of thinly sliced cutlets… and then comes the sauce. A soul-warming combination of butter, mushrooms, sliced shallots, stock and the real flavor changer, Marsala wine, this sauce comes together quickly and is quite memorable. If you aren’t familiar with Marsala wine, it is a slightly sweet fortified wine (you can get an Italian version, but there are also tasty varieties from California) hailing from the city of Marsala in Sicily. Also lovely as an after dinner drink, a bottle of Marsala is a staple in any epicurean’s pantry.
