My Green Beans with Warm Bacon Vinaigrette is a tasty and colorful side dish bursting with flavor! Green Bean Sauté with Warm Bacon Vinaigrette
Ingredients:
- 1 Tablespoon extra virgin olive oil
- 2 cloves garlic, minced
- 2 shallots, peeled and thinly sliced
- 1 lb. green beans, trimmed
- 2 cups sliced sweet peppers
- ½ cup chopped basil
- Salt and pepper
- For the vinaigrette:
- 1 teaspoon Dijon mustard
- 3 Tablespoons sherry vinaigrette
- 2 Tablespoons extra virgin olive oil
- Pinch of salt and pepper
- Pinch of crushed red pepper flakes
- 6 strips of turkey bacon, cooked and chopped into bite-sized pieces
Directions:
- Heat the 1 Tablespoon of oil in a large sauté pan over medium-high heat. Add in the garlic, shallots, green beans and sliced sweet peppers; season with ½ teaspoon salt and ¼ teaspoon of black pepper. Sauté for 5 minutes, or until the vegetables are tender. Stir in the chopped basil and remove the pan from the heat.
- Meanwhile, to make the vinaigrette, whisk the mustard, vinegar, oil, and seasonings together in a small mixing bowl until emulsified. Add the cooked bacon pieces to the vinaigrette. Pour the vinaigrette over the cooked vegetable mixture, toss to combine and serve warm.
