Green Bean Sauté with Warm Bacon Vinaigrette

 My Green Beans with Warm Bacon Vinaigrette is a tasty and colorful side dish bursting with flavor!  Tender green beans and sweet peppers sautéed with cherry tomatoes, basil, shallot and garlic, and finished off with a warm sherry vinaigrette studded with pieces of turkey bacon. Healthy and satisfying, this side dish is one the whole family will enjoy.

Green Bean Sauté with Warm Bacon Vinaigrette

Ingredients:

  • 1 Tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 shallots, peeled and thinly sliced
  • 1 lb. green beans, trimmed
  • 2 cups sliced sweet peppers
  • ½ cup chopped basil
  • Salt and pepper
  • For the vinaigrette:
  • 1 teaspoon Dijon mustard
  • 3 Tablespoons sherry vinaigrette
  • 2 Tablespoons extra virgin olive oil
  • Pinch of salt and pepper
  • Pinch of crushed red pepper flakes
  • 6 strips of turkey bacon, cooked and chopped into bite-sized pieces

Directions:

  1. Heat the 1 Tablespoon of oil in a large sauté pan over medium-high heat. Add in the garlic, shallots, green beans and sliced sweet peppers; season with ½ teaspoon salt and ¼ teaspoon of black pepper. Sauté for 5 minutes, or until the vegetables are tender. Stir in the chopped basil and remove the pan from the heat.
  2. Meanwhile, to make the vinaigrette, whisk the mustard, vinegar, oil, and seasonings together in a small mixing bowl until emulsified. Add the cooked bacon pieces to the vinaigrette. Pour the vinaigrette over the cooked vegetable mixture, toss to combine and serve warm.
