I look forward to the healthy collection of recipes that are published in magazines at the beginning of each year. Rightly so, starting the year off with clean eating that is not only made with fresh, seasonal ingredients but that is also comforting is a wonderful way to go. This lovely vegetarian recipe from Food & Wine magazine packs in nutritional ingredients and a ton of tasteful flavor combinations: chickpeas for protein, Tuscan kale for greens, garlic and crushed red pepper flakes for spice, tomatoes for tang and sweetness, fennel seeds for flavor, and grated cheese for that yummy salty flavor. A vegetarian Italian entree that I love serving either over fluffy white rice, or even pearled farro or whole wheat orzo.
