If you aren’t familiar with za’atar, it is a Middle Eastern spice mix made from a combination of sumac, sesame seeds, salt and other fragrant ingredients. Traditionally seen on pita bread dipped in olive oil, this lovely spice mix is also wonderful on roasted vegetables, mixed into yogurt or served as a sprinkling on hummus. Popular in recipes these days, I was excited to make this roasted carrot side dish that combines not only the flavors of za’atar, but orange juice and zest, tahini, sesame seeds, lemon juice and crumbled feta cheese. Tender, sweet carrots tossed with this level of flavorful ingredients is a real recipe winner!
