When creating a recipe, I take several things into consideration: seasonality, colors, textures and of course flavor. For this healthy side dish really focused in on color ; more specifically green and red. To play off of the lovely red stems of the Swiss chard and its green leaves, I added in green snap peas and red cubes of pancetta as well. Sautéed until tender with a bit of sliced shallots, the crunch of the snap peas works really well with the tender Swiss chard, the crunchy stems and the tender, salty cubes of pancetta.

Swiss Chard with Snap Peas & Pancetta
Ingredients:
- 2 oz. cubed pancetta
- Olive oil
- 2 cups sugar snap peas
- 2 shallots, peeled and thinly sliced
- Salt and pepper
- 1 large head Swiss chard, stems and leaves cut into bite-sized pieces
- 2 Tablespoons red wine vinegar
Directions:
- In a large saute pan, add in the pancetta, 1 Tablespoons of olive oil, sugar snap peas and shallots. Cook over medium-high heat, stirring often for 5-7 minutes, or until the pancetta is crispy.
- Add in in the Swiss chard and 1/2 teaspoon of salt and a big grinding of pepper. Saute over medium heat until the leaves are wilted, approximately 5 minutes. Drizzle with the vinegar and serve warm.
