Cooking Light magazine recently ran a spread on ‘French Vegetable Cooking.’ What a creative and lovely mixture of nutritious side dishes! Each with a simple French flair, one of my favorites was this ‘Grated Carrot Salad.’ A mixture of grated carrots (I used matchstick carrots because I had them in the fridge already…) in a light mustard vinaigrette along with garlic and fresh chives for color and a hint of oniony flavor. Elegant and easy, this side dish is the epitome of simple French cooking.
