This is a perfect Sunday dinner recipe to make for a few reasons. First, it does take a bit of time to make both the homemade gnocchi and the tomato sauce (both well worth the effort though!) and secondly, it is total comfort food perfect for a hungry crowd. Similar to making homemade pasta dough, this recipe for potato gnocchi also involves eggs and creamy ricotta cheese which both add to a fluffy and tender bite of gnocchi. Similar to dumplings, gnocchi are an Italian classic that work well on their own boiled and then sautéed with a touch of butter and fresh herbs, or tossed with a homemade pesto, or like this recipe, floating in a savory marinara sauce. This sauce was incredible; I loved the touch of fresh rosemary as well as the butter; butter actually pairs up with tomatoes very well and adds a touch of extra richness to the sauce. Studded with briny capers and the best green olives you can find, this is Italian comfort food at its best.
