‘Morels with Mint, Peas & Shallots’

 If there ever was a salad that best epitomizes spring, this is it.  A combination of three different types of bright green peas: petit pois, snap peas and snow peas, sautéed together with sliced shallots and butter and flavored with the brightness of preserved lemons and sweet fresh mint.  That along would be a fabulous salad, but wait! There’s one more thing we can’t forget.

One of my favorite springtime ingredients that if you can find fresh at your local farmer’s market….grab some!  Morel mushrooms.  Shaped like honeycombs and full of meaty mushroom flavor, these unique shrooms stand up to other meaty flavors like pork or beef and even cream sauces, but also add a perfect mushroom meatiness all their own.  (I ordered my dried morel mushrooms online at www.spicejungle.com; they are easily rehydrated in warm water.*)
