‘Almond-Chicken Soup with Collard Greens, Sweet Potatoes & Ginger’

A common soup base in North Africa is ground peanuts.  Not only do the nuts add a richness to the broth, but a slight creaminess that pairs very nicely with a rich vegetable like sweet potatoes.  For this version of an African nut soup, almond butter is used instead of peanut butter for a twist on a classic taste.  Also in this hearty soup are tender chunks of chicken, sweet potato cubes, collard greens, and spicy minced ginger. Finished off with a squirt of lime juice for a bit of tart-sweetness, this soup is unique and utterly delicious.
