The simple name of this recipe does not do this recipe justice: yes, they are oven-fried chicken cutlets, but they get their crispy coating from a fragrant mixture of Panko breadcrumbs, salty Parmesan cheese, fresh rosemary, garlic powder and chopped hazelnuts. (I can see pecans or pine nuts working well here, too.) That combination gives you a perfectly crisp coating and a mixture of mayo and mustard give the thin cutlets their moisture.
