 Another sensational recipe from Gwyneth Paltrow’s archive.  A hearty, vegetarian soup that is so scrumptious, you will wish you made a double-batch.  You start by slowly cooking onion and fennel until they are sweet and soft, then you add in the white beans, a pinch of oregano and hot pepper flakes, and then the stock.  Simmer over low heat until thickened, you then add tasty kale into the mix.  To give it a likeness to a traditional French onion soup, she then suggests serving each bowl of goodness with a slice of baguette topped with melted Parmesan cheese.  An unforgettable cold weather treat indeed.
