‘Roasted Carrots with Chimichurri’

 A homemade chimichuri sauce is a zesty Argentinian herb sauce that adds a kick to any dish.  A bright green concoction of fresh parsley, cilantro, chives, and garlic that gets its tang from a dash of red wine vinegar and quality extra virgin olive oil.  Here it is drizzled on top of sweet, roasted baby carrots, but try it on your favorite fish, your next batch of tacos, or even as a marinade for the next grilled flank steak.
