Lima Bean & Pecorino Crostini with Mint

 This elegant and simple crostini recipe has the bright flavor of lemon juice and the salty bite from Pecorino Romano cheese.  These flavorings pair perfectly with the buttery nature of lima beans and the freshness of chopped mint.  Easy to make any time of year, my Lima Bean & Pecorino Crostini with Mint is the perfect addition to any dinner menu.

Lima Bean & Pecorino Crostini with Mint

Ingredients:

  • Whole wheat baguette, cut into ½-inch rounds
  • Quality extra virgin olive oil
  • 1 small can lima beans, drained and rinsed
  • Juice of 2 lemons
  • Touch of salt and pepper
  • Crushed red pepper flakes
  • 1 Tablespoon fresh mint, chopped
  • Pecorino Romano cheese, shaved

Directions:

  1. Preheat the oven to 400 degrees. Place the bread slices on a baking sheet and drizzle with oil. Bake in the preheated oven for 5-7 minutes, or until the bread is lightly browned and crisp.
  2. In a mixing bowl combine the lima beans, a pinch of salt and pepper, 1 Tablespoon of olive oil, a pinch of crushed red pepper flakes, the lemon juice and the fresh mint. Stir gently to combine. Spoon the lima bean mixture over the crostini and garnish with shavings of cheese. These can be served at room temperature.
