Lima Bean & Pecorino Crostini with Mint
Ingredients:
- Whole wheat baguette, cut into ½-inch rounds
- Quality extra virgin olive oil
- 1 small can lima beans, drained and rinsed
- Juice of 2 lemons
- Touch of salt and pepper
- Crushed red pepper flakes
- 1 Tablespoon fresh mint, chopped
- Pecorino Romano cheese, shaved
Directions:
- Preheat the oven to 400 degrees. Place the bread slices on a baking sheet and drizzle with oil. Bake in the preheated oven for 5-7 minutes, or until the bread is lightly browned and crisp.
- In a mixing bowl combine the lima beans, a pinch of salt and pepper, 1 Tablespoon of olive oil, a pinch of crushed red pepper flakes, the lemon juice and the fresh mint. Stir gently to combine. Spoon the lima bean mixture over the crostini and garnish with shavings of cheese. These can be served at room temperature.
