The taste and texture of toasted quinoa is perfect for this healthy Mediterranean side dish. Just like a classic tabbouleh salad, this version contains a lot of fresh herbs, cherry tomatoes, and a lovely lemon vinaigrette. Traditionally, bulgur or even cous cous is added to a tabbouleh salad, but I like the modern (and also gluten-free) approach to quinoa here. (I also love the addition of crunchy cucumbers in this version—a nice added texture and clean taste to the dish.) A fresh side salad or tasty lunch dish, just perfect for those warm, end-of-summer days.
