Pistachio-Zucchini Salad

 This lovely summer salad goes well with anything you are planning to cook on the grill.  There is just something so fresh and lovely about pairing a raw vegetable salad with something cooked outside on the trusty Weber.  Thinly sliced zucchini tossed with lemon zest and lemon juice for the perfect brightness, quality olive oil, crunchy roasted pistachios and that salty bite that only comes from shaved Parmesan cheese.

Pistachio-Zucchini Salad

Ingredients:

  • 3 large zucchini, thinly sliced into rounds on a mandolin
  • Zest of 1 lemon
  • Juice of 2 lemons
  • ¼ cup extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup roasted, salted pistachios
  • Shaved Parmesan cheese, for serving

Directions:

  1. Place the shaved zucchini in a mixing bowl. Toss together with the next 6 ingredients and allow to sit for at least 10 minutes before serving.
  2. Garnish each serving with shaved Parmesan cheese.
