My Mom subscribes to Southern Living magazine so when I am home visiting her, I like to flip through the latest issue’s recipes. I was delighted to find this recipe for ‘Collard Green Carbonara’ in the magazine’s November 2013 issue. A traditional Carbonara is the most decadent of pastas. Usually served over spaghetti, this dish is a rich concoction of eggs, Parmesan cheese, black pepper and bacon, or pancetta. Like many other Italian pasta dishes, you cook the spaghetti separately until al dente, and then toss the warm pasta with the eggs, cheese, seasonings and cooked bacon. The heat from the cooked pastsa, and a bit of the warm pasta water, cooks the eggs ever so slightly until a silky, rich sauce forms over each noodle. This recipe, in additional to eggs, cheese and bacon, also includes cooked red onions and shredded collard greens. These additions add a lovely color and freshness to the pasta that I hope you enjoy as much as we did!
