Sautéed Green Beans with Peaches & Chopped Almonds
Ingredients:
- 8 oz. French style green beans
- 2 Tablespoons unsalted butter
- 1 teaspoon fresh thyme leaves
- 2 garlic cloves, minced
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup chopped almonds
- 1 large, ripe peach, cut into slices
Directions:
- Set up a large bowl of ice water. In a large pot of boiling water, blanch the green beans for 1 minute. Remove from the water and immediately shock the green beans in the ice water.
- In a large sauté pan, melt the butter over medium-high heat. Add in the green beans, fresh thyme, chopped almonds and garlic and season with salt and pepper. Cook, tossing with kitchen tongs, for 3-4 minutes, or until the green beans are tender and coated in the butter.
- Place the green bean mixture in a large bowl and gently toss with the sliced peaches. Serve warm.
