Sautéed Green Beans with Peaches & Chopped Almonds

  Tender French style green beans blanched and shocked to retain their vibrant green color and crispness, followed by a quick sauté in butter and fresh thyme.  All finished off with juicy, sweet slices of peach and a sprinkling of chopped almonds for crunch.  Flavorful and unique, my Sautéed Green Beans with Peaches & Chopped Almonds is an elegant French side dish that perfectly complements any dinner menu.

Sautéed Green Beans with Peaches & Chopped Almonds

Ingredients:

  • 8 oz. French style green beans
  • 2 Tablespoons unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 2 garlic cloves, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup chopped almonds
  • 1 large, ripe peach, cut into slices

Directions:

  1. Set up a large bowl of ice water. In a large pot of boiling water, blanch the green beans for 1 minute. Remove from the water and immediately shock the green beans in the ice water.
  2. In a large sauté pan, melt the butter over medium-high heat. Add in the green beans, fresh thyme, chopped almonds and garlic and season with salt and pepper. Cook, tossing with kitchen tongs, for 3-4 minutes, or until the green beans are tender and coated in the butter.
  3. Place the green bean mixture in a large bowl and gently toss with the sliced peaches. Serve warm.
