Sautéed Haricots Verts with Feta Cheese & Crispy Prosciutto

With just a handful of ingredients needed to make this scrumptious side dish, it is important to use the best ingredients available. From the extra virgin olive oil, to the produce, to the feta cheese and sliced prosciutto, each ingredient adds a layer of flavor and well…yumminess.

The sweet green bell pepper and the sliced haricots verts are first sauteed in some olive oil until just tender; they are then flavored with a pinch of crushed red pepper flakes as they continue to cook in a touch of dry white wine.  To finish the dish off, you crumble or cube some salty feta cheese into the warm green beans, along with a drizzle of a homemade Dijon mustard vinaigrette and a topping of crispy prosciutto chips.

Sautéed Haricots Verts with Feta Cheese & Crispy Prosciutto

Ingredients:

  • 1 1/2 Tablespoons extra virgin olive oil
  • pinch of crushed red pepper flakes
  • 1 small green bell pepper, diced
  • 8 oz. haricots verts, cut into bite-sized pieces ( I recommend cutting each bean into thirds)
  • salt and pepper
  • 1/4 cup dry white wine
  • 2 oz. feta cheese (preferably organic)
  • 3 oz. thinly sliced prosciutto, crisped up in the oven (Bake the prosciutto slices on a parchment-lined baking sheet in a 375 degree oven for approximately 15 minutes)
  • For the vinaigrette:
  • Juice of 1 large lemon
  • 1 teaspoon Dijon mustard
  • 3 Tablespoons olive oil
  • salt and pepper to taste

Directions:

  1. In a large saute pan, heat the olive oil along with the crushed red pepper flakes, diced pepper and green beans over medium-high heat. Season with 1/2 teaspoon of salt and a grinding of black pepper. Saute for 5-7 minutes or until the veggies begin to be tender; add in the white wine, reduce the heat to medium-low, and continue to cook until the veggies are tender to you liking, about 10 minutes longer.
  2. Shake the vinaigrette ingredients in a mason jar fitted with its lid. Drizzle over the warm veggies.
  3. Serve the green bean dish family style, with the feta cheese crumbled onto the dish as well as the crispy prosciutto strips.
