This wonderful sweet yet tangy sauce is quick to make and would be wonderful on a number of vegetables. A mixture of root vegetables comes to mind, as do brussels sprouts, broccoli or even grilled veggie skewers. This version uses grilled eggplant as the base for the mixture of red wine vinegar, olive oil, honey, garlic, and sweet golden raisins. I added in some fresh-from-the-garden cherry tomatoes for added color, all of which benefits from the vibrant ‘pop’ of flavor from the fresh mint garnish.
