This wonderfully colorful and flavorful salad is a perfect pairing for your next stir-fry. Lovely green spinach leaves are tossed together with thin strands of orange carrots and a warm vinaigrette that is made with roasted, sliced mushrooms. The soy vinaigrette is a combination of Dijon mustard for tang, garlic for that peppery onion kick, sweet honey and red wine vinegar. I decided last minute to add in a touch of toasted sesame oil as well for a deep sesame aroma.
