We love keeping jars of curry paste in the fridge. It seems that each time you use them you only use about one Tablespoon or so, so one jar can last quite a long time! A quick curry dish like this one is a great weeknight dinner idea; it comes together effortlessly and couldn’t be more flavorful or more healthy. This version uses a fragrant red curry paste along with flaky cubes of salmon, green beans and sliced onions. Flavored with lime juice, fresh basil and coconut milk, feel free to add in additional veggies, or skip the fish all together and make a nice vegetarian curry. I added in some sliced garlic, sliced red bell pepper and fresh ginger to the mix as well–just for an extra ‘pop’ of flavor and color. Serve this tasty dish over fluffy brown rice with a touch of Sriracha if you are so inclined.
