‘Niçoise Salad with Baby Artichokes’

Yet another fabulous version of a beloved Niçoise salad! This version includes the basics: quality tuna in olive oil, olives, peppers, slices of hard-boiled eggs, basil, tomatoes, haricots verts, and anchovies if you wish–but it also includes artichokes hearts for an extra Mediterranean-kick.  A lovely summertime entree salad, this version is just another reason to love the classic salad from the south of France.
