Ahhh….another creation inspired by the veggie garden. A simple shredded kale salad that is packed with nutrients, packed with flavor, and packed with crunch. Along with the shredded Lacinato kale, I tossed in some buttery Marcona almonds, (a lovely Spanish almond that are a bit more round and a bit softer and sweeter than the almonds we are used to) and some plump organic raisins. Finished off with a nice mustardy-garlicky vinaigrette, this simple salad would also work well with your favorite nut variety from the pantry, and also either dried cranberries, blueberries or currants.

Shredded Kale Salad with Marcona Almonds & Golden Raisins
Ingredients:
- 4 cups kale, shredded
- 1/2 cup Marcona almonds
- 1/4 cup plump raisins
- For the vinaigrette:
- 3 garlic cloves, minced
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Juice of 1 lemon
- 1/4 cup olive oil
- 3 Tablespoons Champagne vinegar
- salt and pepper to taste
Directions:
- Toss the shredded kale, almonds and raisins in a large salad bowl.
- To make the vinaigrette, combine all of its ingredients in a small bowl. Whisk (or shake in a jar) until emulsified and smooth. Season with salt and pepper to taste. Drizzle over the salad, toss again, and serve.
