I love the variety of organic greens offered in grocery stores these days. One of my favorite types is that of sweet pea greens. These tender baby greens are delicate and have a mild green pea flavor which is remarkable. I decided to pair these sweet pea greens with fresh basil leaves for a simple salad reminiscent of Spring. Also in the mix for a dash of color and unexpected flavor are a few dried rose petals; they pair so nicely with the sweet greens and a simple homemade creamy vinaigrette that is flavored with a touch of honey, Dijon mustard and tangy Greek yogurt. This is a delicate salad that transports your taste buds to springtime temperatures with each and every bite.

Sweet Pea Greens, Basil & Rose Petal Salad
Ingredients:
- 4 cups sweet pea greens
- 1 cup fresh basil leaves
- 2 Tablespoons dried rose petals
- For the vinaigrette:
- 1 Tablespoon Greek yogurt
- 1 Tablespoon Dijon mustard
- Pinch of salt and pepper
- 1 teaspoon honey
- ¼ cup extra virgin olive oil
- 3 Tablespoons red wine vinegar
Directions:
- Toss the greens, rose petals and basil leaves together in a salad bowl.
- Whisk the vinaigrette ingredients together in a small bowl. Drizzle over the greens and serve.
