‘Sweet Garlic-Fennel Bisque with Toasted Pine Nuts’

This creamy bisque is lovely served either warm or chilled from the fridge. The combination of tender garlic cooking in the mixture of heavy cream and half and half paired with the unique licorice-scented sliced fennel and fennel fronds is a decadent one.  Pureed, seasoned and served with chopped fennel fronds and buttery, toasted pine nuts, this elegant soup is a lovely first course or a light dinner when served with a simple salad of fresh greens, herbs and cherry tomatoes from the garden.
