I adore the idea of serving roasted, vertical slices of cauliflower as a hearty vegetarian entree. (To even non-vegetarian dinner guests, this elegant entrée is unique and flavorful!) This roasted cauliflower steaks are served with a homemade Romesco sauce: a simple and classic Spanish sauce made from a puree of roasted red peppers, almonds, sherry vinegar, tomato paste and paprika. A gorgeous red-hued sauce that works well when paired with the ‘meaty’ cauliflower steak.
