My Buttered Cucumbers & Radishes with Fresh Dill is a simple French side dish that will wow your dinner companions. There is something so elegant about cooking cucumbers and radishes; we can thank Julia Child for initially bringing this to our attention… I decided to cut the cucumbers into spears and bake them, along with thinly sliced radishes, with some butter and fresh dill. With a simple sprinkle of salt and pepper for flavor, this classic combination is one that is sure to please.

Buttered Cucumbers & Radishes with Fresh Dill
Ingredients:
- 1 small cucumber
- 4 radishes, ends trimmed and thinly sliced
- salt and pepper
- 1 Tablespoon unsalted butter
- Fresh dill, chopped
Directions:
- Preheat the oven to 375 degrees. Place the cucumber spears and radishes in a glass baking dish that has been sprayed with cooking spray. Season with ½ teaspoon salt and ¼ teaspoon of black pepper. Top with small pieces of the butter and the fresh dill. Bake in the preheated oven for 18-20 minutes, or until the veggies are tender and the butter melted. Serve warm.
