Cooking en papillote, or in a parchment pouch, is a healthy way to serve your favorite proteins and vegetables. It is a spectacular presentation as well! It’s simple: just season your fish, chicken or vegetables, layer in the parchment pouch, add in a touch of wine or lemon juice and bake. The steam inside of the tightly packaged pouches cooks the ingredients to tasty perfection. (This specific recipe calls for baby bok choy and shallots, but I used baby kale, cherry tomatoes and red onions. Whatever you have on hand vegetable-wise will work just as well.)
