This is such a superb salad—it’s no wonder that the Pollan Family has chosen it as their go-to, signature salad. Any tender greens will do, but I used a head of local butter lettuce as the base and tossed it with buttery walnuts, Parmesan cheese and their flavorful homemade vinaigrette. I love the mixture of oils and vinegars along with Dijon mustard for the dressing; a light mixture of both sherry or raspberry vinegar with tangy white balsamic vinegar, and a combo of grapeseed oil and a touch of olive oil. Simple but very flavorful, this is a side salad that goes with anything else you wish to pair it with. It could easily be turned into a main course salad for lunch or a light supper with a grilled chicken breast or a roasted, herb-crusted fish filet.
