Oh how I love spaghetti squash! It is truly one of nature’s miracle vegetables…thin strands of good-for-you squash that are delicious flavored with well, just about anything. Here I have flavored them with fresh chives and fresh thyme, a touch of salt and pepper, olive oil and crunchy pine nuts. To top it all off I placed rounds of goat cheese to warm and slightly melt on top of this pasta alternative. Hearty and unique, my Herbed Spaghetti Squash with Pine Nuts & Goat Cheese is simple and ready to be served!

Herbed Spaghetti Squash with Pine Nuts & Goat Cheese
Ingredients:
- 1 spaghetti squash, cut in half lengthwise, seeds removed
- Olive oil
- Salt and pepper
- Crushed red pepper flakes
- 3 Tablespoons fresh herbs
- 2 Tablespoons pine nuts
- 4 oz. goat cheese
Directions:
- Preheat the oven to 400 degrees. Drizzle oil on a parchment-lined baking sheet. Place the squash halves, cut side down, on the baking sheet. Roast for 25-30 minutes or until tender when pierced with a knife. Allow the squash to cool before using a fork to remove the strands of squash.
- To the strands of squash, add in salt and pepper to taste, 1 Tablespoon oil, fresh herbs and pine nuts. Top with mounds of goat cheese and bake for 5 minutes to slightly melt the cheese. Serve warm.
