I try to cook salmon at least twice a month—not only for its health benefits, but for its rich buttery taste. It pairs well with almost any topping and side dish you can think of; so versatile and so delicious, I could honestly eat salmon everyday and not get tired of it. For this fresh recipe, I have topped baked salmon filets with a relish made from fresh oregano, feta cheese, briny olives and segments of lemon. Served over a simple pea puree with fresh mint and roasted lemon wedges for an extra citrusy kick, my Baked Salmon with Mediterranean Relish & Minty Pea Puree is healthy, fresh and utterly delectable.

Baked almon with Mediterranean Relish & Minty Pea Purée
Ingredients:
- (2) 7oz. salmon filets
- Salt and pepper
- 1 lemon, cut into 4 slices
- For the relish:
- 1 lemon, segmented
- ¼ cup mixed olives, chopped
- 1 Tablespoon fresh oregano, chopped
- 2 Tablespoons feta cheese, crumbled
- Pinch of crushed red pepper flakes
- 1 Tablespoon red wine vinegar
- 1 Tablespoon olive oil
- For the pea puree:
- 1 cup cooked green peas
- Salt and pepper
- Olive oil
- 2 Tablespoons fresh mint, chopped
Directions:
- Preheat the oven to 400 degrees. Lay the lemon slices on a parchment-lined baking sheet. Top with the salmon fillets; season then with a pinch of salt and pepper. Bake for 15 minutes, or until the fish is flaky.
- To make the relish, combine its ingredients in a small mixing bowl.
- To make the puree, place the cooked peas, a pinch of salt and pepper, 1 Tablespoon of oil, and the chopped mint into the bowl of a food processor. Puree until smooth.
- Serve the fish on top of the baked lemon slices, pea puree and garnish with some of the relish.
