This seasonal recipe has all of the elements that to me, make up a perfect salad. A hearty mix of tender, shredded black kale, creamy avocado, crunchy pine nuts and sweet cubes of pitted, dried dates. And don’t forget salty Parmesan cheese and a splash of simple lemon vinaigrette before serving. A nice accompaniment to a succulent roast chicken or roasted turkey tenderloin, but also a nice lunch idea when topped with poached chicken or even a grilled piece of salmon.
