While traditional Russian blini are made with yeast, these small buckwheat flour pancakes are a thicker version of crepe batter that includes baking powder for a thicker consistency. Nutty in taste from the use of buckwheat or whole wheat flour, these lovely small bites are traditionally topped with either smoked salmon or caviar, and a touch of crème fraiche. I livened up the crème fraiche (or sour cream) topping with a touch of horseradish and a snipping of fresh chives. An elegant appetizer perfect for your upcoming Holiday celebrations!

Blini with Smoked Salmon & Horseradish Cream
Ingredients:

- For the horseradish cream, I altered her recipe and mixed 1/4 cup sour cream with 2 Tablespoons of horseradish. Garnish the blini with chives and a grinding of black pepper.
