These simple stuffed mushrooms are bursting with flavor. The combination of roasted garlic and nutty Gruyere cheese is perfectly complimented with a sprig of fresh thyme. Roasted Garlic & Gruyere Stuffed Mushrooms
Ingredients:
- Button mushrooms, cleaned and stems removed
- Extra virgin olive oil
- Salt & Pepper
- Head of garlic
- Small cubes of Gruyere (or Swiss) cheese
- Fresh thyme
Directions:
- Preheat the oven to 400 degrees. First you need to roast the head of garlic. Place the head of garlic, drizzled with olive oil, in aluminum foil. Wrap it tightly and place on a baking sheet. Bake for 30 minutes, or until the cloves are super tender when pierced with a knife. Squeeze out the cloves of garlic, you’ll need about 1 clove per 2 mushrooms so cut each in half.
- Reduce the heat of the oven to 375 degrees. Stuff each button mushroom with ½ a roasted garlic clove and cube of cheese. Top with fresh thyme and drizzle the mushrooms with a touch of oil. Season with a pinch of salt and pepper. Bake the mushrooms for 25 minutes, or until the cheese is melted and the mushrooms tender.
