My sister Mary Lauren recently told me about a tasty salmon dish that she had at a restaurant in Birmingham.  Thinly sliced prosciutto wrapped around a salmon fillet, baked and served with a dollop of the most delicious pesto sauce.  It sounded so wonderful I had to recreate it for us…and right away!  The saltiness of the prosciutto pairs nicely with the tender baked salmon, and it gets a bit crispy which is a lovely contrast of textures.  Finished off with a spoonful of your favorite pesto sauce and a dinner filled with flavor and elegance is served.

Prosciutto-Wrapped Salmon with Pesto

Ingredients:

  • 4-(5 oz.) salmon fillets, skinless
  • Salt and pepper
  • 4 slices of thinly sliced prosciutto
  • 4 Tablespoons of pesto sauce

Directions:

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
  2. Season each salmon fillet with a pinch of salt and black pepper. Wrap each salmon filet with a thin slice of prosciutto. Bake the salmon in the preheated oven for 20-25 minutes, or until the fish is flaky and perfectly cooked.
  3. Top each cooked fillet with a touch of peso sauce and serve.

    I made this too and it is great. Adding some sundried tomatoes is a nice touch as well! Thanks ML.

      Yum yum! I bet the tomatoes do add a nice tart taste to the dish. Did you add them underneath the prosciutto? I bet some roasted, sliced Roma tomatoes would also be a nice touch. Yes, thanks again ML! Always looking for new and delicious salmon ideas.
