I was thrilled to read in a recent issue of Food & Wine magazine that one of my favorite TV food personalities, Giada De Laurentiis, is opening a restaurant (aptly named Giada) in Las Vegas. I have always been a fan of her cooking shows and cookbooks, but most importantly her modern, everyday approach to cooking. Her recipe for ‘Lemon Spaghetti with Shrimp’ truly epitomizes her approach to cooking, focus on quality ingredients, and super flavorful plates.
This unique recipe starts with frying briny capers until they are browned and crisp and then making a super lemony sauce from lemon juice, lemon zest, extra virgin olive oil and grated Parmesan cheese. The shrimp are cooked until pink and tender and then the lemon sauce is added. This is all tossed with perfectly cooked, al dente spaghetti before it is finished off with a bit of fresh basil. Super flavorful and quite impressive, this dish pairs very nicely with a crisp glass of rosé wine.
