Calling all olive lovers! I guarantee you won’t be able to just eat one of these fabulous Olive-Pastry Bites. Buttery puff pastry rounds filled with briny pimento-stuffed olives, topped with a simple shredding of Parmesan cheese and baked until golden brown. A lovely addition to your next tapas plate, hors d’oeuvres platter, or as a stand-alone small bite, all these tasty morsels need is your favorite cocktail for that perfect pre-dinner pairing.

Olive-Pastry Bites
Ingredients:
- 1 sheet of frozen puff pastry, defrosted
- 12 pimento-stuffed green olives
- Parmesan cheese, grated
Directions:
- Preheat the oven to 350 degrees. Line a baking sheet with either aluminum foil or parchment paper. Lay the defrosted puff pastry on a lightly floured surface. With a ¼ cup measure, cut out 12 rounds of dough.
- Place 1 olive in the center of each dough round; bring the edges together into a semi-circle shape and pinch to close. Sprinkle each round with grated cheese and place on the baking sheet.
- Bake for 25 minutes or until lightly browned. Serve warm.
