One of the many wonders that we received last week from our CSA was a large rutabaga. Similar in appearance to a large turnip, this yellow-fleshed root vegetable is slightly sweet when cooked and utterly delicious. The first thing I thought to do with the rutabaga was to mash it for a low-carb alternative to traditional mashed potatoes. To complement the rutabagas slight natural sweetness, I paired this mash with a sweet Gala apple. A simple side dish that is creamy, delicious and satisfying

Rutabaga & Apple Mash
Ingredients:
- 1 large rutabaga, peeled and cut into 1-inch cubes
- 1 apple, peeled and cut into 1-inch cubes
- 2 Tablespoons unsalted butter
- ¼ cup heavy cream
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
Directions:
- Place the cubes of rutabaga and apple in a large saucepan. Cover with water and bring to a boil; reduce to a simmer and cook for 25 minutes, or until the cubes are tender when pierced with a knife.
- Drain the mixture and place in the bowl of a food processor. Add in the butter, cream and seasonings. Puree until smooth. Serve warm.
