Brussels Sprouts & Prosciutto Pizza

Pizza is one of those universal foods in that versions of it are eaten around the world, and the possibilities for toppings are endless.  You’re probably thinking, brussels sprouts on a pizza?   My immediate response would be if you haven’t tried it, do so and immediately!  That’s the wonderful thing about homemade pizzas—everything from traditional toppings like cheese and pepperoni are exceptionally tasty, and so are combinations of ingredients that are not so usual.  Think of pizzas as a blank slate, very similar to pasta in this way.  Start by choosing your favorite ingredients and your favorite cheeses and… voila.  A masterpiece is born.  This one involves tender brussels sprouts, red onions, salty prosciutto slices, a lemon-flavored ricotta cheese, and yes—the gooiest of cheeses, fresh mozzarella.  This pizza is flavorful, fragrant, and truly is an utter delight.

Brussels Sprouts & Prosciutto Pizza

Ingredients:

  • 1 Tablespoon cornmeal or semolina flour
  • 1 ball of pizza dough (store bought or homemade)
  • 1 Tablespoon extra virgin olive oil
  • ½ lb. brussels sprouts, ends trimmed and cut in half lengthwise
  • ½ red onion, thinly sliced
  • Salt & pepper, divided
  • 7.5 oz. part-skim ricotta cheese
  • Zest from 1 lemon
  • 2 oz. prosciutto, thinly sliced and cut into 2-inch lengths
  • 8 oz. ball of fresh mozzarella, cut into 6 rounds
  • 1 Tablespoon fresh thyme, chopped
  • Pinch of crushed red pepper flakes

Directions:

  1. Preheat the oven to 450 degrees. Line a baking sheet with parchment paper and sprinkle with the cornmeal or semolina flour. Form the pizza crust into a large circle and place on the prepared baking sheet.
  2. In a sauté pan, heat the olive oil over medium-high heat. Add in the brussels sprouts and red onion and sauté for 3 minutes, or until the onions are tender and the brussels sprouts begin to brown. Allow to cool in a small bowl.
  3. Meanwhile, place the ricotta cheese in a small mixing bowl. Add in the lemon zest, ¼ teaspoon salt and a pinch of black pepper. Mix together well.
  4. Spread the ricotta mixture on the prepared pizza dough leaving about a 1-inch border of dough around the edge untouched by the ricotta cheese. Next, cover the ricotta cheese layer with the sliced prosciutto. Then, lay the mozzarella cheese rounds on top of the prosciutto layer. Next comes the cooked brussels sprouts and red onion on top of the mozzarella cheese. Finish the pizza with the chopped thyme and a pinch of crushed red pepper flakes.
  5. Bake the pizza in the preheated oven for 25-30 minutes, or until the cheese is melted and the crust lightly browned. Allow the pizza to cook once it is cooked before serving.
