Creamy Rosemary Mashed Potatoes
Ingredients:
- 3 large russet potatoes, scrubbed and cut into large pieces
- 1 cup whole milk
- 4 tablespoons unsalted butter
- 2 Tablespoons fresh rosemary, chopped
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Directions:
- Place the cut potatoes in a large pot of water. Bring to a boil and simmer for 25-30 minutes or until tender when pierced with a knife. Drain and place in a large mixing bowl. Mash with a potato masher.
- In a small saucepan combine the milk, butter and chopped rosemary. Heat over medium-low heat until warmed through and the butter has melted. Pour into the mashed potatoes and stir until creamy and all of the liquid has incorporated fully. Season with salt and pepper and serve warm.
