Cherry  Tomato Sauce

Most of the time, when that tomato sauce craving hits, it seems easier to buy a jar of your favorite store brand of marinara sauce than it does to make a flavorful homemade red sauce all your own.  But the truth of the matter is, fresh tomato sauce is not only just as easy to throw together and even tastier that its store bought counterpart, but is better for you because it contains less sugar, less sodium, and absolutely none of the preservatives and additives that the jarred version most likely contains.

Let this Simple Tomato Sauce recipe make you re-think your decision to buy the jarred stuff—all you need is ripe cherry tomatoes, garlic, fresh basil, and the best olive oil you find.  This sauce works wonders on your favorite al dente pasta, atop a grilled chicken breast, or even on top of your favorite pizza crust.

Simple Tomato Sauce

Ingredients:

  • Wash and halve 2 pints of ripe cherry tomatoes. In a large sauté pan add 1/2 cup of quality olive oil and 3 garlic cloves, thinly sliced. Heat the pan over a medium heat until the garlic begins to be fragrant, but not yet browned. (this will only take about 2 minutes) Add in the halved cherry tomatoes and ½ a cup of fresh basil leaves, chopped. Season the mixture with ½ teaspoon of salt and ¼ teaspoon of freshly ground black pepper, and cook over medium-low heat for another 20 minutes. If you want to add a bit of spice to the sauce, drizzle in a touch of chili oil, or add a pinch of crushed red pepper flakes to the pan as well.
