When craving the smoky yet spicy taste of chipotle sauce, I prefer buying a small can of chipotle salsa instead of a can of chipotle peppers in adobo sauce. This way, the sauce and the peppers are already pureed together making it easy to add in the perfect amount of smooth chipotle sauce into whatever you desire. For this baked fish dish, I decided to pair a touch of the chipotle salsa with sweet cherry preserves, lime juice and a touch of sweet ketchup for a tomatoey touch. Baked with a glaze of this pureed sauce and also served with some the sauce for dipping, this slightly sweet, slightly smoky, slightly spicy sauce works wonders not only on baked fish, but on grilled chicken or pork, shrimp skewers and even a seared block of creamy tofu for a vegetarian main.

Cherry-Chipotle Glazed Salmon
Ingredients:
- (4) salmon fillets (6-7 oz. each, preferably skin-on)
- Salt and pepper
- ½ teaspoon ground cumin
- 1 lime, quartered for serving
- shipped chives or parsley, for garnish
- For the glaze:
- ½ cup ketchup (organic preferably)
- 2 Tablespoons chipotle salsa
- ½ cup cherry preserves
- Juice of 1 lime
Directions:
- Preheat the oven to 400 degrees. Spray a baking sheet with olive oil spray. Season each salmon fillet with salt, pepper and a quarter of the ground cumin. Arrange on the baking sheet and make the glaze.
- To make the glaze, place the ingredients (plus a pinch of salt and pepper) into the bowl of a small food processor. Pulse until smooth. Taste, and adjust seasonings if necessary. Spread about 1 Tablespoon of the glaze on each seasoned fish fillet. Keep the rest of the sauce for serving.
- Bake the fish for 16-18 minutes, or until flaky and cooked to your liking. Serve with lime wedges, a sprinkling of fresh herbs and the remaining glaze for dipping.
