I truly can’t think of a more delicious Fall salad. It highlights in particular one of my favorite fruits of the season, that of persimmons. A gorgeous orange-hued fruit that looks similar to a tomato, but with the crispy texture and sweetness of an apple. Simply sliced and served on a bed of peppery watercress and crunchy sliced endive, the salad is then topped with a creamy element (crumbled goat cheese), a crunchy element (chopped hazelnuts) and a tangy vinaigrette. For a pop of color, I decided to finish the salad off with some tart pomegranate arils as well.
